What You'll Need
(4) Red Peppers (diced)
(6) tomatoes (diced)
(2) sm cans of Vegetable broth
(1) lg can of tomato juice (or 2 if you're making a lot)
(2) tablespoons of butter
(4) cloves of garlic (diced)
(1.5) cups of milk
seasonings :: black pepper, crushed red pepper, basil, oregano
Dice red peppers, tomatoes, garlic. Put in crock pot. Pour in two cans of vegetable broth. Add butter and seasonings (remember that your soup will get spicier as it sets). Simmer on warm (4-6 hours) or low (2-4 hours). Stir occassionally.
Pour in tomato juice (one can if you're making a medium pot, two if you're making a lot). Stir. Pour into blender (usually in shifts), transfer into new pot/bowl. After it has all been blended, stir in milk. Return to crock pot. Heat on warm until ready to serve.
