I was led to this recipe this weekend after our weekly CSA delivery from Irv and Shelley's::
which included Beets, Red Savoy Cabbage, White Mushrooms, Celery, Cucumber, Red Peppers, Cauliflower, and leeks. I also had half a head of green cabbage from our last order.
Combine those ingredients with the Raspberry Dill Vinegar by the mother of Lily Sky that I purchased at Handmade Market and I was ready for coleslaw success!

You will need ::
2 dashes of salt
1 tbs celery seed
4 heaping tbs of mayo
1/2 cup raspberry vinegar
1/2 cup sugar
1 tbs parsley
1/2 head purple cabbage
1/2 head green cabbage
1 Red pepper
1 cup sunflower seeds
Chop veggies and set aside in a large bowl.
Mix spices, mayo, vinegar, and sugar in a smaller bowl.
Add liquid to the veggies. Toss heartily until all veggie are covered.
Add sunflower seeds for an extra crunch!
Expect a huge mess and have fun cleaning it up, like I did!
