Jimmy started out as Uncle Red, but has progressed into 'Squatch' among our nieces and nephews which is short for Uncle Sasquatch. Fitting, no?
Sometimes having friends in low places speaks to the character of company kept. Other times it's literal in that those friends live in a handmade cabin in the valley of the Spoon River on an off grid farm mere miles from where I grew up. Tim and his family are full time homesteaders who raise and forage for the food they consume and organically farm half of their full 30+ acres. They've mentored Jimmyredhed and I as we work to establish our aspiring urban homestead and have become dear friends in the process.
We retreated to the countryside over Memorial Day weekend to breathe in, let go, and just be. Jimmy's parents as well as mine joined us for our time at the farm. We worked to grind wheat for our pancakes, shook cream into butter, and Tim taught Jimmyredhed the process of taking beautiful, organic, free range chickens from farm to table. When the brilliant country sky dipped below the trees and the fire died down we retreated to the hayloft at day's end.
I'm still processing our time at our friends' farm and the experience of watching a chicken going from a living breathing animal to respectfully killed, skillfully cleaned, and tastefully prepared over the fire. I'll share more on this experience soon.
