After living off a soft food diet for the last three days, I've been dying for something with substance. I decided to venture out into the land of rice and I'm hoping my mouth won't be paying for it later.
So here's a super easy and quick wrap recipe using most of what's lying around the kitchen.
-- (2) tbs Olive Oil
-- (1) cup Vegetable broth
-- (1) cont. tofu -- 14 oz
-- (1) bag of frozen veggies (I used stir fry)
-- (1/2) onion
-- (1) Red pepper
-- (4) Garlic cloves
-- (2) cups of rice
-- (4) cups of water
-- (6-pack) Spinach Wraps
black pepper, red pepper, cumin, curry powder, dill (I give a few shakes of each)
Boil four cups of water to two cups of rice.
Heat oil in a skillet on medium heat. Chop all veggies. Sautee onion, garlic, and red pepper for approx. five minutes or until they're almost translucent.
